Happy Fall, Y’all!
Again, did I mention that I’m from the South?
It’s Fall, my absolute FAVORITE time of year! I love the cool weather, the colors of the leaves, and Halloween! I also love the flavors of fall, apples, cinnamon, cranberry, pumpkin and all kinds of squash! So to kick things off, I started the season with a recipe that I’ve been hanging on to all Summer. In my search for various muffin recipes, I stumbled upon this one. It’s everything you could want and full of Fall flavors (sans pumpkin). This recipe has Fall spices like cinnamon and nutmeg, combined with apples, and carrots, and all sorts of tastiness. Ingredients like these are also good for your digestion.
There’s honestly not much more that I can say about them, except that they are awesome! This gem came from That Paleo Couple. I didn’t technically make any modifications to the recipe. Buuuuut, I did get side-tracked and completely forgot to put the maple syrup in as the sweetener. I will say, they were still delicious without it. But, the texture came out a little crumbly, which you will only actually notice if you tried eating them with a fork. I’m wondering if the maple syrup may have also helped keep ingredients together for texture.
