I honestly did not like to cook, for the longest time. I have no real cooking “skills” to speak of. I’m always jealous of those who can take random ingredients from the fridge or pantry, and make a magical combination. I can cook if I have a detailed recipe to follow (mostly for simple things like casseroles). My husband is Italian and likes to cook, so I usually let him have at it.
However, since staying at home more during the COVID-19 pandemic, there are definitely some foods that I have missed. So, I decided to branch out and give it a shot and make Phó. Once again, with me coming from a casserole background this is something that usually would terrify me to try to make. But, why not? Being at home more has really allowed me to be more flexible and honestly, more courageous with my cooking. Plus, my husband and I have been working together in the kitchen more, so I know that someone has my back if I feel like things aren’t looking or tasting right.
Thanks to the internet, there are multiple recipes for Phó. I found this one, and it seemed pretty straight forward. We tried the version of the recipe where you make the broth in the Crockpot and it turned out great! We just added the ingredients of the broth to the Crockpot, let it do it’s thing for a few hours, then we just added the pre-cooked noodles and our beef to the pot for the last 5-10 minutes.
After that, just pour a bowl of it and add your toppings! It tastes just like the Phó I used to get at the restaurants, during my work lunch dates.
