No matter what anyone tells you about sugar content, fruits are good for you. Obviously you need to be careful about not overdoing it because of sugar or carbohydrate content (depending on how you’re eating / “diet”, if you’re monitoring blood sugar, or something like that). I was on a track years ago that did not allow me to eat bananas at all, and I don’t ever want to live that life. Be sure you pay attention to the serving size of fruits. Now, enough of the preaching let’s get to one of my favorite fruits.
I LOVE WATERMELON.This has become one of my go-to dinner sides / snacks for Summer. Did I mention I’m from the South? Jokes aside, I find it ridiculously refreshing, and it can be a great palate cleanser if you have a boldly flavored dinner along with it. My husband calls it “Nature’s Cotton Candy”, because he says that as soon as you put it in your mouth, it’s gone. I know that everytime I have it I devour it and I’m sure many others would agree.
Anyway, this combination is a sure thing! Just cut up some watermelon into chunks, drizzle some balsamic glaze, sprinkle some chopped fresh mint (spearmint) and then top with feta cheese. This gives you a great sweet / savory combination and the watermelon/ mint duo gives a splendid, fresh taste!
